Cinco de Mayo - Avocado Lime Parfait #giveaway #amazingavocinco
I can't believe today is May 1st! This year seems to be flying by. And in just a few days it will be Cinco de Mayo. When given the opportunity I am all about celebrating and what would a Cinco de Mayo celebration be without avocados? Guacamole is a fav of mine, salsa verde, I can go on. But this year, I wanted to start the celebration early - in the morning with an avocado lime yogurt parfait.
The creamy avocado is great as an addition to smoothies but until I saw a recipe on the Avocados from Mexico site, it never occurred to me to use them in yogurt. It makes absolute sense the rich texture blends easily with the yogurt. For my recipe I used Greek yogurt to add protein to the mix and the avocado contributed nearly 20 vitamins and minerals including good fats.
I have always been a fan of avocados and will sometimes simply cut one up, smash it and add lemon and salt. I enjoy this on crackers but most especially on my salmon nori rolls! Cinco de Mayo has inspired not only me but a few of my friends to make recipes utilizing avocados. Without further ado here is the avocado parfait recipe!
Avocado Lime Yogurt Parfait
Avocado from Mexico, halved, pitted and peeled
2 cups vanilla yogurt
1 tablespoon lime juice
1-1/2 teaspoons grated lime peel, divided
3 cups diced fruit
1 cup granola
Combine 3/4 of the avocado, yogurt, lime juice and 1 teaspoon of the peel in a food processor; whirl until smooth. Cube remaining avocado; add to fruit. Layer yogurt mixture, fruit and granola in four bowls. Sprinkle with remaining lime peel to garnish.

Seven Layer Dip II
2 avocados - peeled, pitted and diced
1 1/2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
1/4 cup salsa
garlic salt to taste
ground black pepper to taste
1 (8 ounce) container sour cream
1 (1 ounce) package taco seasoning mix
4 roma (plum) tomatoes, diced
1 bunch green onions, finely chopped
1 (16 ounce) can refried beans
2 cups shredded Mexican-style cheese blend
1 (2.25 ounce) can black olives - drained and finely chopped

In a medium bowl, mash the avocados. Mix in lime juice, cilantro, salsa, garlic salt and pepper.
In a small bowl, blend the sour cream and taco seasoning.
In a 9x13 inch dish or on a large serving platter, spread the refried beans. Top with sour cream mixture. Spread on guacamole. Top with tomatoes, green onions, Mexican-style cheese blend and black olives.

& hot sauce. What a Yummy salad! I used to eat it when I pregnant all the time.
I have been trying to avoid dairy, so when the mood strikes I just blend an avocado with raw cacao powder, a little maple syrup and maybe a touch of vanilla extract, refrigerate, and yum :-)
Yield: 16 muffins (or 12 regular + 8 mini, which is what I did)
Ingredients:
1 ripe avocado, mashed
1 ripe banana, mashed
2 tbsp oil
½ cup light brown sugar, packed
2 large eggs
1 tsp vanilla
½ cup milk
1 ½ cups white whole wheat flour
½ cup oats
½ cup ground flaxseed
2 tsp baking powder
½ tsp baking soda
½ tsp salt
¼ cup dark cocoa powder
¾ cup dried tart cherries, chopped
½ cup mini chocolate chips
Instructions:
1. Preheat the oven to 350áµ’F. Spray muffin cups with cooking spray or line with paper liners.
2. In a mixer, cream the avocado, banana, oil and sugar at medium speed until smooth. Add in the eggs one a time. Add the vanilla and milk. Mix until smooth.
3. In a separate bowl, mix together all of the dry ingredients, the flour through the cocoa powder. Stir well with a whisk.
4. Slowly add the dry ingredients to the wet, mixing just until combined being careful not to over-mix. Stir in the cherries and chocolate chips.
5. Fill muffin cups 3/4 of the way with the batter. Bake for 16-20 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Remove from oven and cool on a wire rack.
Note: For a smoother texture, grind the oats in a food processor before mixing with the rest of the dry ingredients.
