A Simple Meal




I enjoy cooking but on a daily basis I like to keep things simple. One of the favorites in my home is a simple pasta with meatballs and marinara sauce. Since I am not a meat eater I make some substitutions which my son enjoys. I use Trader Joe's meatless meatballs, I believe they win hands down in the flavor department but if I am in a pinch I pick up another brand at my local grocery store. For the sauce I love the Barilla line, this time I used Mushroom and garlic sauce and spiced it up with McCormick's Italian Herb Seasoning (in the grinder). I placed both in a casserole dish and baked in the oven for about 10 minutes. At the same time I cooked the pasta (don't forget to add EVOO!) and I lightly salted the water with Diamond Crystal Salt Sense (33% less sodium than other salt).

And in ten minutes I had a great meal! Here is a photo of my sauce and meatballs in my new Frigidaire range. You may remember I am a Frigidaire Test Drive Mom and my range has been wonderful. This was the first time I actually used the oven and I have to tell you that I am pleased. I can place my hand on the outside of the oven door and it is cool to the touch. My main problem with my old oven was the heat it generated, I don't have this problem now. Another thing you might notice is the rack slides out automatically! I don't have to reach in to pull out the rack.

Yes, the trader Joe's meatless meatballs are good. I used to make my own sauce, but then I checked out the sodium content on the bottles of sauce and realized I was wasting my time because the sodium isn't too high. I prefer Classico brand though. That meal looks yummy and fast is always great.

I've never tried their meatless meatballs. I'm not usually a fan of "fake" meat. I find it be to be fairly tasteless. Do you find these have good flavor? I might just have to try them.

Wow I had spaghetti for dinner last night lol! That is just amazing. Now meatless meatballs are something to try. I cannot believe you are just now using that oven. I just knew you were a baking machine! My Samsung never gets a break. I can't wait for you to bake a cake. Does it have a convection setting?
It does look delicious! Low sodium alternatives are always welcome.

Hey Renee. I am sorry but being married to an Italian has made me a marinara snob! Making homemade marinara (also known as Gravy)is so easy to make. Two cans of tomato (pureed in the blender) garlic, 2 onions, basil, parsley and oregano. Make a huge pot of it and freeze it in containers. Then you have easy sauce that you can defrost and add your meatballs to. LOL. Nix the jarred sauce- too much extra crap in it1 OK- stepping off of my soapbox now. LOL.
Man that looks so good. I am going to try this meat substitute although I am a meat lover. Recently I've been doing a lot of cooking and must say I enjoyed it. I need more variety.
Okay is it really a meatball if there is no meat? LOL! If I don't wanna do beef the. I go turkey. That was a huge step for me already! Don't think I'm ready for meetless!

Okay, have u seriously gone this long without using your oven ? ??

That sounds good! I've never used that before. The only substitute I've used is tufu and... ut oh, the name escapes me.

So... can I have that stove? I promise I'll give it back. (My fingers are crossed behind my back!)

that looks yummy! im gonna try that meal. I consider myself a "part-time" vegetarian hoping to be fulltime one day. A new meatless recipe would be great to try. thanks for sharing. And oh yeah, your stove STILL totally rocks.
