Sweet Potato Pie {recipe}

With holidays in full swing, my baking and cooking has been increasing (which is pretty obvious if you are a regular reader of my blog)! I absolutely love to cook and create with the intent to share my creations with friends and family near and far. This week I purchased a KitchenAid Artisan Stand mixer, I’ve wanted one for years and with the help of my mom this girl’s dream came true! Of course I had to put it to work immediately and although I just made sweet potato pie for Thanksgiving, I made two more pies last night!

Oh yes for holiday entertaining there is no better option than sweet potato pie. This has been a staple for me during the holidays since I was a teenager and sat at the feet of my “play” auntie being her taste tester for sweet potato pie and learning the ropes! Since those years, I have worked on constantly improving my recipe and every year the taste of my pie improves. I am a pie lover oh yes I am and my favorite is sweet potato pie! I have struggled with the idea of sharing my recipe on the blog because I hold it near and dear to my heart. And quite frankly, I really do no measuring as I was taught, I constantly taste during preparation and when it is right I just know it!

So, while I can’t share my exact recipe with you, I am posting a recipe that will provide you with a foundation for a great sweet potato pie and feel free to doctor it up as you see fit. I will tell you that this year I used a little brandy in my creations and it was delicious! While it is not necessary, it certainly gave the pie a little something special!

I purchased all of the items used for my pies from Walmart - with the exception of the brandy of course and you can find all of your necessities for holiday baking there too!

Sweet Potato Pie

1 lb sweet potato
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup evaporated milk
2 eggs
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tsp vanilla
1 tsp brandy
1 deep dish pie crust

1. Pre-Heat oven to 350 degrees.
2. Boil sweet potatoes for about 45 -50 minutes until a fork is easily stuck in it. Peel and mash sweet potatoes.
3. Add all ingredients and mix until smooth.
4. Pour into pie crust.

5. Bake for 55-60 minutes until knife in center comes out clean. Cool. Enjoy!
