Strawberry Lemonade Popsicle {Recipe}





It is strawberry season! As a Walmart mom I was challenged to share a recipe utilizing strawberries that my family enjoys. I jumping on this opportunity immediately because strawberries just happen to be my son’s favorite fruit. We live in Hotlanta and with the temperatures rising my first thought was to mix two of his favorite things - strawberries and lemonade! So, strawberry lemonade popsicles are what I’m sharing with you today. But first, I want to give you a tip for when you purchase strawberries for your favorite recipe - strawberry shortcakes anyone? Or just to enjoy on their own.


When selecting strawberries be sure to choose the ones that are the most fragrant, plump, firm, fresh looking and free of mold. Strawberries do not ripen after they are picked so you must be sure to make the best selection while in the store. I personally inspect the entire package before purchasing, and am always on the lookout for strawberries that are bruised or moldy in the package. If when opening you find a moldy strawberry, remove it immediately because mold spreads quickly and can ruin the entire batch. Now that you’ve selected the perfect strawberries, let’s move on to making those popsicles!




It is so simple, you start with the juice of about 4 lemons (depending on the size) to make a cup of lemon juice. Next after cleaning the strawberries you add them to the mix. Next up, add a cup of water and a half-cup of agave nectar (available at Walmart) to sweeten.



Blend to desired consistency 



and then pour into molds. After scouring the web for various popsicle molds my son and I together choose these star popsicle molds which are the perfect size for little hands!



Freeze for at least four hours, remove from mold and enjoy! This delicious confection is perfect for a hot summer day but we’ve started early enjoying the fresh strawberry harvest at Walmart!




Strawberry Lemonade Popsicles


Ingredients
1 cup fresh squeezed lemon juice (approx 4 or 5 lemons)
1 cup fresh strawberries
1 cup water
1/2 cup agave nectar


Method
Add all ingredients to blender, mix until desired consistency is reached and pour into popsicle molds. Freeze for at least four hours. Enjoy!
