As a Ragu Mom's The Word on Dinner ambassador I was asked about my utilization of leftovers but instead of leftovers I like to call it lunch/dinner redux! In the photo above I used a piece of salmon that I'd cooked the night before in my lunch salad. It was amazing and I enjoyed it. Since my son doesn't really like to eat salmon outright, I made muffins with the remaining salmon, froze them and reheated when my son wanted one. Sneaky way for me to get him to eat protein but no food goes to waste!

I like to make a roast chicken then I can make Chicken Queso Soup or Quesadillas. Or beef chili then turn it into spaghetti sauce. Ok now I'm hungry LOL
I like to make spaghetti for dinner, and since we always have a ton, I place some of the leftovers under a piece of baked chicken and melted mozzarella for Chicken Parmesan the next day.
I make pancakes on Saturday mornings and have enough for Sunday. The boys think I'm the best for making pancakes two days in a row!

When I bake chicken, I will save the breast to make chicken salad. I also make meatloaf and I can get several meals which I serve with rice, pasta or mash potatoes.

When I make roasted chicken, I use the leftovers to make a gluten free pasta salad. Just toss together your favorite gluten free pasts, chopped bell pepper, chopped onion, the chopped up cooked chicken, and some mayo--it is delicious and makes a great lunch or dinner.

When I have leftover leg of lamb, I dice it up and make an old family barbecue sauce recipe. The lamb goes into the barbecue sauce and it's to die for!

Mine is a super simple one... but when we make healthy burritos or tacos... I save the leftovers and scramble eggs for breakfast burritos the next day!
I use leftover chicken to make Romaine wraps for lunch the next day (for me) and chicken salad (for the boys).

Whenever I make spaghetti and turkey meat sauce, I always cook a little more meat than we need. Then the next day, we put the leftover meat in tortilla wraps or on top of nachos with lettuce tomatoes, cheese, sour cream and all the extras. Saves me a lot of work, and everybody loves being able to choose what goes on their burrito or nachos. Win-win!

Being the Maryland girl that I am, crabs are a huge part of the cuisine in most areas. We like to order crabs by the dozen. If there are more left, I like to make crab soup or pick the meat to make a crab cake. Believe me, crabs never go to waste.
I make a whole roaster chicken one night and then bring it back to the old school and shred/chop the remainder to make the family chicken pot pies

When we have pork roast on Sunday, we will have pork sandwiches the next day for lunch and bar-b-que for dinner.
We like to take leftover chicken or turkey and make soup with lots of beans and veggies!
I like to take left over taco meat and either make taco lasagna or like a 7 layer bean dip!

I made a faux sheperd's pie with some leftover meatloaf. I put the meatloaf on the bottom of the pan, topped that with some drained kidney beans, next mashed potatos, mixed it a little then added some cheddar cheese. Topped it all off with a biscuit crust! YUMMY!!!

We eat with friends at Moe's one night a week. When we leave the employees always give us a bag of chips to go. We eat them the next day for lunch either with melted cheddar cheese on top or with queso dip.

My favorite is having leftover baked/roasted chicken and being able to shred it and make either chicken burritos or chicken quesadillas. So easy and so yummy.
I always make a black bean corn chili that we eat with cheese and avocado the first night. Then we have it over quinoa or rice for lunch the next day or mixed in a omelet. It's just as good days later.

It's just me, but I can't seem to cook for just one. When I make meatloaf, I break down the leftover and fry it with yellow rice and veggie medley. With a side of cornbread. SWEET!

I love the holidays because it gives me a whole turkey to use the meat of for dinner throughout the week. I make turkey casserole with leftovers, also turkey sandwiches, turkey seasoned with taco seasoning makes a great filler for tacos also~ :)

This salmon looks delicious. I always make it on a George Foreman grill, without pressing it down so it doesn't remove the juices from it.

I used my leftover turkey (we had relatives come early so had Thanksgiving Sunday) for crustless quiche last night. I sauted onion in butter, added eggs, some half and half, thyme, chopped up turkey and poured it into a tarte pan. Topped it with fresh tomatoes. Hubby added cheese but I ate mine like that. I also made turkey patties the day before.
I also saved the turkey bones in the freezer and that will become a delicious turkey soup. Can't let that go to waste!

When I make mashed potatoes, I make a large amount. The next day, I add onions and shape them into patties and fry them. My mashed potato pancakes are great for breakfast and lunch.

Mine is probably too simple,lol. I'm save leftover noodles we had and reheat them the next day with more Ragu sauce. Then we just add some garlic bread. I think the noodles taste better reheated the next day anyway. :)

I simmer all the turkey bones with veggies for hours to make a super rich stock. I pick all the meat from the bones and end up with a stock with meat that can be used for chicken and noodles turkey pie, or turkey soups.

After we've had a dinner of turkey or chicken, I pull the rest of the meat off the bone, cube it and make turkey or chicken salad with it, adding chopped celery, some pickle relish and mayonnaise! Makes for great lunches- either on a bed of lettuce, or on a roll or bread as a sandwich.

Today I am making turkey salad sandwiches with left over turkey from Thanksgiving. I use chopped turkey, mango chutney that has been ground up in the food processor, Mayo, diced Green pepper and fresh cracked peppercorn.

I serve it on a crescent with Havarti cheese and romaine lettuce.

Credit to my mom for the best use of leftover turkey I've found. She's from Louisiana and can make some kickass southern dishes. One of my favorites when growing up was her gumbo. Every year after Thanksgiving not only did we get delicious turkey sandwiches, she also set aside leftover turkey to combine with sausage, rice and other goodies to make the best gumbo I've ever eaten!

Since I was a kid, it was called "crap, crud and garbage"...not as bad as it sounds (and it was the only time us kids were allowed to say "crap" so we really enjoyed it). Whatever was left over got thrown in with some pasta and sauce.

I love to use leftover meatloaf to make a delicious Shepherd's Pie the next day. I crumble up the meatloaf and put it in a casserole dish, stir in a can of cream of mushroom soup and half a cup of milk, add a layer of carrots, celery, and onions, and top with mashed potatoes. Thanks!

Oh- all the turkey today! We always make a big pot of turkey and rice soup using the leftover crudite veggies, turkey and any leftover green beans thrown in at the last minute so as not to overcook. Freeze it. With the rest of the turkey- I'll make turkey with pajamas on- our version of chicken parm. Using a pre-made sauce like Ragu makes this a quick meal. Pop some garlic bread in the oven (seconds to make- or buy it pre-made), boil some pasta, and throw together a salad.

It isn't a Thanksgiving redux, but I actually like leftovers after St Patrick's Day better than the meal itself. My mom usually takes leftover corned beef, cabbage, potatos, and carrots and chops it all up and then fries it to get some crust on it. Corned beef hash!!

We love crab legs, but no one in my family is crazy about messing with the knuckle, so we eat the crab legs and then later I clean out the knuckles, freeze it and use it in recipes I would normally use canned crab, like crab rangoon which is one of our fav appetizers.

I save the turkey carcass from Thanksgiving and the next day boil it with some water. Skim the bones out then add all the leftovers into a soup along with a mirepoix. Cook it down for several hours and its ready by dinner.

One night I make meatloaf.. the next night I cut up leftover meatloaf into 1 inch cubes. I mix with tomato sauce and serve over spaghetti or baked in the oven with rigatoni and cheese. Serve with parmesan cheese and cheesy garlic bread.

After we are done with the turkey I
make TURKEY POT PIE:
2 cups of cooked turkey cut or torn into bite size pieces
1 can cream of chicken soup
1 can veg-all (drained)
1 package refridgerated pie crusts

Turn oven to 375. Place pie crust in bottom of pie dish. Mix together all the other ingredients and place in pie dish. Cover with the remaining pie crust. Put two slits in the top and bake for about 40 minutes (until pie crust starts to brown)

I use all the leftover turkey from Thanksgiving for either turkey soup or turkey pot pies---my hubby just discovered how to make homemade pot pies so we are looking forward to using the leftover turkey for some turkey pot pies tomorrow!

I like to make a whole chicken or turkey for dinner. Then the next day I take the leftovers and make soup.

I use our leftover taco meat and combine it with some refried beans, cheese and salsa and make quesadillas with them.

I like to put a pork loin in the slow-cooker all day with bbq sauce. Any leftovers are shredded and either made into a sandwich or top my bbq salad.

Whenever I make a roast chicken and have leftovers, the next day I'll make chicken wraps with lettuce, tomato, and pickles—YUM!

My favorite meal I make using leftover mashed potatoes is Potato Croquettes with a side of sour cream for breakfast. Soooo good!

Whenever we make tacos, I keep some of the meat to make a 7 layer dip the next day. I think that is my favorite part of taco night - the next day!
