Low Fat Apple Crisp







I don’t know about you but when I think about the Fall, apples come to mind. And many of the goodies associated with apples are both high in fat and calories - least I forget, DELICIOUS! The other day when I was on facebook Jane posted an apple crisp recipe that looked so tasty I think my drool hit my keyboard. LOL But it had a lot of butter in the crust and after my weekend foray into buffalo territory I decided I needed to come up with my own recipe that was a bit more health friendly.


Reading Jane’s blog post inspired me to make an apple crisp. Of course I had to put my twist on it and make a low-fat version and add some extra goodness.  For my recipe I kept the skin on the apples for extra fiber,
I used milled flax seed (more fiber and I picked it up at Walmart),


gluten free flour and rolled oats.



For my first attempt at making an apple crisp, I think it was a success. The crisp was really crispy! 


The granny smith apples were a perfect complement to the sugary crisp. I did only about 3/4 cups of white mixed with brown sugar and I think this is a good occasional treat. Most apple crisps use a ton of butter but in my version I only used a tablespoon of Earth’s Best buttery spread and it still was good! 


Since I only used four apples for my crisp I have another five left over. What are your favorite uses for apples? I need suggestions! 


Oh and here is the recipe 
 
Low-Fat Apple Crisp

1 egg (or egg substitute)
1 cup Gluten Free Flour
3/4 cup granulated sugar
1/4 cup Brown sugar
1 tbsp baking soda
1 tbsp milled flax seed
1/4 cup organic rolled oats
1/2 tbsp cinnamon (fresh - try to find it at a farmers market it is so good!)
4-8 Granny Smith apples
1 tbsp Earth’s Best Buttery spread (or you can use butter)

Mix the first 8 ingredients in a mixing bowl and set aside ( It will look kind of dry but that is okay)
Cut the apples in 1/4 inch slices, leaving the skin on (more fiber).
Layer the apples in a 8x8 baking dish.
Spread the topping over the apples.
Drizzle with melted “butter”
Cook for an hour in a 300 degree oven.

Prepare to enjoy a great tasting low-fat version of an old favorite! 



If you want to find apples at good prices I suggest stopping by your local Walmart. They have a variety of apples(as you can see in the picture) and are in the midst of the AppleFest. I even found locally grown and organic in my Walmart. Love that! This weekend many Walmart's are having special events for the Applefest you should check and see if your local store is participating. Enjoy apple season!

I have copied and pasted this recipe and it will be made for our Canadian Thanksgiving supper on Sunday (yes, ours is in October, and it's not nearly as festive as the American Thanksgiving).

Wow, Renee, that looks incredible! Yes, my recipe is definitely on the high fat/sugar/butter side!! We are planning on having a little bake-off this weekend and I'm going to be making my recipe, of course, but I just may have to try yours, too! I'm sure there will be plenty of apples!!

Simply delish! I used melted coconut oil instead of butter :P It turned out so YUM!
